Vegan Diet, Day 5

I’ve made it through 5 days of my week long Vegan Diet! I’m so proud of myself. Just 2 more days to go.

Today might have been the toughest day because I went to my sister’s house for dinner. She made fish tacos & had key lime pie for dessert. Fortunately, she made beans as well so I was able to enjoy a bean & guacamole taco. Yummy!

I also enjoyed a whole wheat pita pocket with homemade hummus, lettuce, tomato & cucumber. Vegan food is so good!

Vegan Diet, Day 4

Today I was much hungrier than yesterday. Could have been yesterday’s good workout.

My favorite meal of the day was a Trader Joe’s Organic Tofu burger on a toasted whole wheat pita with homemade hummus, tomatoes, cucumbers and romaine lettuce. I think I am enjoying vegan food more than I enjoy any other food.

Of course, today my family had one of my favorites for dinner: Dad’s smoked brisket. I was so glad I ate dinner before them!

I’ve been tracking my calories for a couple of days and it’s interesting. Yesterday I went way over on my carbs (but it was all fiber) and was under for my sugar. Today I was under on my carbs but way over on my sugar (the Larabar and soy yogurt upped my sugar count).

This morning for breakfast I enjoyed a Larabar in Chocolate Chip Cookie Dough. I checked Larabar’s website to make sure it was vegan. They ask their supplier to produce vegan chocolate chips but there is a chance of cross contamination since the supplier does make chocolate chips containing dairy. That is good enough for me! What do you think?

Vegan Diet, Day 3

Today went really well. I wasn’t nearly as hungry today. And when I found myself hungry, the vegan food filled me up quickly. I am a bit hungry now but it is rather late to be eating.

As for today’s menu, it was just a repeat of recent days. But still very filling! Oatmeal for breakfast and burritos for lunch and dinner (beans go bad so fast that I wanted to finish them off today). My new favorite meal is the black bean burrito I posted yesterday. It will be in the weekly rotation for sure.

While the rest of the family’s meal smelled deliciously buttery, I was smart enough to eat dinner before them & wasn’t hungry.

Vegan Diet, Day 2

I have nearly completed day 2 of my Vegan week! And I was not as hungry today as yesterday.

I am feeling pretty good but it is a little difficult to be in a house with ice cream, chicken enchiladas and cheese.

I thought it might be fun to list my favorite meal(s) of the day. For lunch, I enjoyed an Organic Tofu burger from Trader Joe’s (found in the refrigerated section) on a whole wheat pita pocket with lettuce, tomato & deli mustard. For dinner, I spiced up some black beans with onion powder, garlic powder and garlic salt. I warmed up a flour tortilla (from Trader Joe’s!) but need to pick up some whole wheat tortillas. Inside the tortilla, I put quinoa, the black beans, tomatoes, homemade salsa and avocado. It was so good and filling!

Only 5 more days to go. I can do this!

Vegan Diet, Day 1

As you can probably tell from my title, I started a vegan diet today. I’m committing to a week of this. That means no meat, dairy, eggs or even honey. So no ice cream the next week! This will probably be the most difficult part.

Day 1 went pretty well except I wasn’t sure what to eat and found myself rather hungry. My go to snack has been string cheese. Now I guess it will be nuts. And fruit. I’ve had so much fruit today – peach, banana, dried cranberries, fresh apricot and cherries.

The nice thing about this diet is no limit on food. So when I am hungry, I can eat! Got to love that part, right?

Why am I doing this you ask? Because I’ve been reading up on vegan diets and how they can really help with weight loss for those of who just can’t seem to drop that extra weight. Also, it’s really good for your health (i.e. lowering cholesterol, lowering cancer risk).

As for my weight, it just does not seem to be moving. I’m up 2 pounds, then down 2 pounds, then up 2 pounds. Just losing the same 2 pounds over and over.

Purpose

Hello! I’m starting this blog to mostly keep up on getting healthier. Specifically, eating better and getting regular exercise. I’ve gone through spurts of being healthy but I’d really like to make it permanent.

Lately, I’ve been really giving into my junk food addiction. And I can tell I’ve put on weight but I’m scared to step on the scale.

Tomorrow is a new day and I will step on that scale and be honest with myself. My goal is to follow http://www.hacres.com/hallelujah-diet/explanation for at least 30 days. Giving up coffee is going to be difficult!

Today I’ve really indulged. Soda, avocado enchiladas, Sonic mozzarella cheese sticks with ranch, candy bar and chocolate soft frozen yogurt from Braum’s. No wonder I’m putting on weight, right?
